Ingredients
  

  • 8 oz cremini or baby bella mushrooms sliced
  • 1 small yellow onion thinly sliced
  • 3 tablespoons butter divided
  • 2 cloves garlic minced
  • 1 teaspoon fresh thyme leaves or ΒΌ teaspoon dried
  • 1 teaspoon Worcestershire sauce
  • 4 slices Swiss cheese about 4 oz
  • 4 slices sourdough bread
  • 2 teaspoons Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Heat 1 tablespoon butter in a large skillet over medium heat. Add sliced onions and cook until softened, about 3-4 minutes.
  • Add mushrooms, garlic, thyme, salt, and pepper. Cook, stirring occasionally, until mushrooms release their moisture and turn golden brown, about 7-10 minutes.
  • Add Worcestershire sauce, stir for another minute, then remove from heat and set aside.
  • Butter the outside of each bread slice. Spread Dijon mustard on the inside of one slice.
  • Place half the Swiss cheese on the inside of one bread slice, top with the mushroom mixture, then add remaining cheese. Top with second bread slice, buttered side out.
  • Heat a clean skillet over medium heat. Place sandwich in skillet and cook until golden brown, about 3-4 minutes per side, until cheese is fully melted.
  • Let rest for 1 minute before cutting diagonally. Serve immediately .

Notes

  • For deeper mushroom flavor, use a mix of mushroom varieties
  • Grate cheese from a block for better melting
  • If bread browns too quickly but cheese isn't melted, lower heat and cover briefly
  • For extra flavor, add a dash of balsamic vinegar to the mushrooms
