- 8 oz cremini or baby bella mushrooms sliced
- 1 small yellow onion thinly sliced
- 3 tablespoons butter divided
- 2 cloves garlic minced
- 1 teaspoon fresh thyme leaves or ΒΌ teaspoon dried
- 1 teaspoon Worcestershire sauce
- 4 slices Swiss cheese about 4 oz
- 4 slices sourdough bread
- 2 teaspoons Dijon mustard
- Salt and freshly ground black pepper to taste
Heat 1 tablespoon butter in a large skillet over medium heat. Add sliced onions and cook until softened, about 3-4 minutes.
Add mushrooms, garlic, thyme, salt, and pepper. Cook, stirring occasionally, until mushrooms release their moisture and turn golden brown, about 7-10 minutes.
Add Worcestershire sauce, stir for another minute, then remove from heat and set aside.
Butter the outside of each bread slice. Spread Dijon mustard on the inside of one slice.
Place half the Swiss cheese on the inside of one bread slice, top with the mushroom mixture, then add remaining cheese. Top with second bread slice, buttered side out.
Heat a clean skillet over medium heat. Place sandwich in skillet and cook until golden brown, about 3-4 minutes per side, until cheese is fully melted.
Let rest for 1 minute before cutting diagonally. Serve immediately .
