Instructions
Preheat the oven to 375°F (190°C). Line a muffin tin with liners or lightly grease.
In a bowl, whisk together the flour, baking powder, and salt.
In another bowl, whisk the eggs and sugar until light and fluffy.
Add melted butter, milk, lemon zest, and lemon juice. Mix until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Divide the batter evenly into the muffin tin, filling about 3/4 full.
Bake for 18-20 minutes or until a toothpick inserted comes out clean.
Let the muffins cool for a few minutes before transferring them to a wire rack.
Notes
For extra flavor, brush the warm muffins with a lemon glaze made of powdered sugar and lemon juice!
