Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 2 eggs room temperature
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1 cup milk room temperature
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice freshly squeezed

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a muffin tin with liners or lightly grease.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, whisk the eggs and sugar until light and fluffy.
  • Add melted butter, milk, lemon zest, and lemon juice. Mix until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Divide the batter evenly into the muffin tin, filling about 3/4 full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • Let the muffins cool for a few minutes before transferring them to a wire rack.

Notes

For extra flavor, brush the warm muffins with a lemon glaze made of powdered sugar and lemon juice!
