  • 1 1/2 cups all-purpose flour
  • 1 cup shredded coconut unsweetened or sweetened
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup sweetened condensed milk
  • 1 large egg
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, shredded coconut, baking powder, and salt. Set aside.
  • In a separate bowl, beat butter and sugar until light and fluffy.
  • Add condensed milk, egg, and vanilla extract, mixing until smooth.
  • Gradually add the dry ingredients, stirring until a soft dough forms.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Let cool on a wire rack before serving.

Notes

For extra flavor, drizzle melted chocolate over the biscuits once cooled.
