- 8 oz cremini or baby bella mushrooms, sliced
- 1 small yellow onion, thinly sliced
- 3 tablespoons butter, divided
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or ¼ teaspoon dried)
- 1 teaspoon Worcestershire sauce
- 4 slices Swiss cheese (about 4 oz)
- 4 slices sourdough bread
- 2 teaspoons Dijon mustard
- Salt and freshly ground black pepper, to taste
Instructions
- Heat 1 tablespoon butter in a large skillet over medium heat. Add sliced onions and cook until softened, about 3-4 minutes.
- Add mushrooms, garlic, thyme, salt, and pepper. Cook, stirring occasionally, until mushrooms release their moisture and turn golden brown, about 7-10 minutes.
- Add Worcestershire sauce, stir for another minute, then remove from heat and set aside.
- Butter the outside of each bread slice. Spread Dijon mustard on the inside of one slice.
- Place half the Swiss cheese on the inside of one bread slice, top with the mushroom mixture, then add remaining cheese. Top with second bread slice, buttered side out.
- Heat a clean skillet over medium heat. Place sandwich in skillet and cook until golden brown, about 3-4 minutes per side, until cheese is fully melted.
- Let rest for 1 minute before cutting diagonally. Serve immediately .
Notes
- For deeper mushroom flavor, use a mix of mushroom varieties
- Grate cheese from a block for better melting
- If bread browns too quickly but cheese isn’t melted, lower heat and cover briefly
- For extra flavor, add a dash of balsamic vinegar to the mushrooms
