Description

The Grilled Cheese Burrito is a cheesy, indulgent meal inspired by Taco Bell’s fan-favorite. Featuring seasoned beef, gooey cheese, and a crispy, golden tortilla, it’s the ultimate comfort food. Perfect for a family dinner or a satisfying snack, this recipe allows you to enjoy the fast-food classic at home with customizable ingredients.

Ingredients

1 large flour tortilla

½ cup shredded cheese blend (cheddar, mozzarella, Monterey Jack)

½ cup seasoned ground beef (or chicken/steak)

¼ cup cooked rice (lightly seasoned)

¼ cup crunchy tortilla strips

2 tbsp chipotle sauce

2 tbsp reduced-fat sour cream

1 tbsp butter or oil (for grilling)

Optional toppings: sliced jalapeños, diced tomatoes, or fresh cilantro

Instructions

Cook the beef: In a skillet, cook ground beef with taco seasoning until browned.

Prepare the rice: Cook the rice with a pinch of salt and lime juice for added flavor.

Assemble the burrito: Spread chipotle sauce and sour cream on the tortilla. Add beef, rice, tortilla strips, and shredded cheese in layers.

Roll the burrito: Fold in the sides of the tortilla, then roll tightly.

Add the cheese crust: Heat a skillet, sprinkle shredded cheese directly onto it, and place the burrito seam-side down on the cheese. Grill for 1-2 minutes until golden and crispy. Flip and repeat for the other side.

Serve: Slice the burrito in half and garnish with cilantro or jalapeños if desired. Enjoy hot!

Notes

Swap out beef for plant-based meat to make it vegetarian.

Use whole wheat tortillas for a healthier option.

Add spicy salsa or hot sauce for extra heat.
