Description

A comforting and hearty cowboy casserole made with ground beef, melted cheese, crispy tater tots, and a creamy sauce. Perfect for dinner!

Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1/2 cup sour cream

1 can (15 oz) corn, drained

1 ½ cups shredded cheddar cheese

1 bag (32 oz) frozen tater tots

Salt, pepper, paprika (to taste)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Cook Beef Mixture: In a large skillet over medium heat, brown the ground beef. Add diced onion and garlic, cooking until softened. Drain excess grease.

Mix Ingredients: Combine the cooked beef with cream of mushroom soup, sour cream, and drained corn in a bowl. Season with salt, pepper, and paprika.

Assemble the Casserole: Spread the beef mixture evenly in the baking dish. Sprinkle shredded cheddar cheese over the top. Layer frozen tater tots on top, covering the dish.

Bake: Bake uncovered for 35-40 minutes or until the tater tots are golden brown and crispy. For extra crunch, broil for 2-3 minutes.

Rest & Serve: Let the casserole cool for 5 minutes before serving.

Notes

Add diced green chilies or jalapeños for a spicy twist.

Substitute ground turkey for a leaner version.

Make it vegetarian by swapping beef for black beans or lentils.
